Ingredients
1) 1/2 bunch mint leaves - Do not take more mint, it tastes strong.
2) 3/4 bunch Coriander leaves
3) Cleaned ginger to taste
4) Spicy green chillies to taste
5) Black salt & regular salt
6) Caroom seeds
7) Hing powder
8) Tamarind (1/2 big wati)
9) Dates or khajur (1 big wati)
10) Jaggery (lots of)
11) Red chilli powder
12) Chaat masala
13) Boiled potatoes
14) Salted boondi
15) Puri's
16) Aamchur powder
Method 1) Sweet paani ( prepare a day prior)
1) Boil tamarind, khajur & Jaggery in a bowl for 8-10 mins.
2) Cool the mixture. Now, put little by little mixture in a mixer. Grind it properly.
3) Strain the mixture through the sieve. Add required quantity of water.
4) Add red chilli powder, Chaat masala, Hing, salt to taste. Taste it. Sweet paani should be aambat good.
5) Cool the mixture in a fridge.
2) Theeka paani (prepare one day prior)
1) In a mixer, grind mint leaves, coriander leaves, ginger, chillies, caroom seeds.
2) Add sufficient water. Now add black salt, little jaggery, aamchur powder, Chaat masala. Taste the paani. It should be spicy.
3) Keep the water in fridge.
3) Potato stuffing
1) Boil & peel the potatoes. Cut it small size.
2) Add red chilli powder, salt to it.
3) Add boondi. Stuffing is ready.
