Til Paneer

Ingredients:
1) 1 base paneer cut into cubes
2) 1-2 cups maida
3) 1 tsp garlic paste
4) 2 tsp red chili powder
5) 3 tsp bread crumps + 1 tsp sesame seeds + 2 tsp rawa for coating
6) 1 tsp corriander powder
7) 1 tsp cumin powder
8) 2 tsp chaat masala
9) Salt to taste
10) Oil for deep frying

Method:
1) Mix 2-4, 6-9  ingredients. Add required quantity of water. Make it into a paste.
2) Dip the paneer cubes into the paste. Roll it into the coating & put in hot oil for deep frying.
3) Til panner is ready. Serve it with your favourite chutney.

Amla Pickle

Ingredients:

1) 1/2kg green amla
2) 100gms or half or 1/4gms of 100 gms  mustard dal (mohari dal)
3) 3-4 tsp red chili powder
4) 3-4 tsp turmeric powder
5) 3-4 tsp coriander powder
6) 2 tsp fenugreek seeds
7) 2-3 tsp asafoetida
8) Salt & Jaggery to taste
9) 3-4 tbsp oil

Method:
1) Wash the amla. Dry it properly.
2) In a wok, heat oil. Keep the amla in it & steam them for approx. 30 mins.
3) Now remove the amla from the wok. Cut it into pieces. Into the wok, add fenugreek seeds & asafoetida powder.
4) Put off the burner. Now add the hot oil in the above masala (from 2-5 & 8). Allow it to cool.
5) Mix the amla in the above masala. Now, add the pickle in the clean glass container.
6) Taste the picke next day. If you feel, pickle is very dry, add hot oil into it.

Appum

Ingredients: For 4 people
1) 2 cups rawa (used for upama)
2) 2 cups or more dahi
3) Grated ginger
4) 5-6 curry leaves
5) Salt & Sugar to taste
6) Oil
7) A pinch of eating soda

Method:
1) Soak the rawa & dahi overnight (or for 1-1.30 hrs)
2) Next day, in to the mixture add ingredients 3,4,5,7.
3) On to the hot pan, add little oil & add the batter.
4) Cover the pan with a dish. Allow the appum to cook for 3-4 mins on low flame.
5) Serve the hot appum with coconut chutney or ketchup.

Sabudana Vada

Ingredients: Makes 12 small vadas
1) 1/2 cup sabudana
2) 1 cup boiled & mashed potatoes
3) 1/4 cup rajgira flour
4) 1 tsp grated ginger
5) 1-2 chopped green chillies
6) 1/2 tsp lemon juice
7) 2 tbsp chopped coriander
8) Salt to taste

Method:
1) Wash the sabudana. Drain & keep aside overnight. Sprinkle a little water above the level of sabudana, just to moisten it.
2) Mix the sabudana with all the ingredients & knead slightly to form a soft dough.
3) Divide the mixture into 12 equal portions. Shape each portion into round & flatten slightly.
4) Deep fry the vadas into hot oil until they are golden brown in color & drain on absorbent paper.
5) Serve hot with green chutney.

Dal Vada


Dal vada is a tasty & healthy evening snack.

Ingredients:

1) Soak 1 cup urad dal & 1 cup chana dal in water for 3-4 hours. (You can also soak all 3 types of dal in equal quantities : Urad dal, Moong dal, Chana dal).

2) 3-4 green chilies
3) 3-4 garlic cloves

4) 1/2 inch ginger

5) 3-4 curry leaves

6) 12-15 sprigs of coriander

7) Salt to taste

8) 2-3 tbsp cooking oil


Method:
1) Blend the soaked dals in a blender. Make it into coarse paste by adding little water.

2) Into the above mixture, add all the ingredients (from 2 -7).

3) Make small dumplings from the above mixture, & deep fry them in hot cooking oil until they are golden brown.
4) Serve these hot vadas with coconut chutney or with tomato ketchup.
