Eggless chocolate brownie

 Ingredients (Use special measuring spoons)

1 cup maida (take 1 aatachi  wati, shigoshig bharun)

1/2 tsp baking pwd 

 1/2 tsp baking soda or eating soda

1/4 cup cocoa pwd

1 tsp inst coffee pwd

Sieve all the above dry items.


Beat till light and fluffy 100 GMs butter or ghee slightly less to 1 wati (same wati as mentioned above) and 1 same wati powdered sugar. 


Now add 5 tbsp curds to Buttersugar mixture, add 1 tsp vanilla essence. Add 1/4 cup milk. Mix well


Add the dry items to the above and use cut and fold method. Add walnuts and choco chips or grated chocolate. Mix lightly. 

Pre heat the oven. In a 6 by 6 tray put butter paper or use regular aluminium container. Put the batter( thick) into it. At 180 C convection mode in microwave bake for 35 minutes. (Do not use any stand in microwave. Keep the aluminium container directly).

Yummy Taco 🌮

 Ingredients

1) 2 - 3 grated carrots

2) A bowl of sweet corn

3) 3 med chopped onions

4) 4 boiled potatoes

5) 1,5 L milk made into paneer

6) Tomato sauce

7) Veg mayonnaise

8) Ching's green chilli sauce

9) Butter

10) Aamchur powder

11) Salt & sugar to taste

12) Grated ginger garlic


Method

1) In a wok, add oil. Now add ginger garlic paste & all the veggies.

2) Steam it for 10 mins on medium flame.

3) Now add salt, sugar, Aamchur powder, tomato sauce.

4) Sabji is ready.

5) Take roti. Put it on a hot pan. On one half of roti, put green chilli sauce & on other half veg mayonnaise.

6) Put sabji on one half & top it with grated paneer. Fold the chapati into half & gently press it. Apply butter on both sides of roti, pressing gently. Make the taco on a low flame.

Shahi Upama

 Ingredients

1) 1 1/4 regular wati regular rava

2) 1 big chopped onion

3) 1 medium chopped tomato

4) Finely cut ginger

5) Handful of peanuts

6) 2 tsp urad Dal

7) 7-8 cashewnuts

8) Curry leaves

9) 2-3 tsp dahi

10) 6 tsp pure ghee (per head 1 tsp)

Method

1) Add ghee in a wok. Give regular phodni. Add onion, cahews & then tomato. Sauté it for 8-10 mins. Add salt & sugar, dahi. 

2) Now add rava & roast it on medium flame. 

3) Add approx. 3.5 watis of water. Cover with lid & let it cook for 7-8 minutes. 

4) Upama is ready. Release ghee from all sides.

Samosa with chole chaat

Ingredients (for 17 samosas)
1) 2 cups maida + little rava
2) Ajwain
3) 4 medium boiled potatoes
4) Tamarind - gud chutney
5) Red chilli powder chutney
6) Whole dhaney for sabji
7) Oil
8) Ginger garlic paste
9) Simple chole sabji cooked with tomato paste.

Method -
1) Knead the samosa dough. Mix maida, Ajwain, hot oil & water. Cover the dough with a moist cloth for 20 mins.
2) Make normal potato sabji.
3) Take a ball size dough & roll it oval.
4) For samosa shape, you can check on YouTube or Pintinterest.
5) Fill the potato sabji. Cover the samosa.
6) In a hot oil, deep fry the samosa on low or medium flame. Not on high flame. It will remain kachaa.
7) Serve samosa chole with chutneys.

Veg momos steam

Ingredients
1) 2 big watis maida / aata
2) chopped veg of your choice carrots, capsicum,onion
3) Ginger garlic paste
4) Soya sauce
5) Vinegar

Method
1) Make the dough by adding water & a little oil.
2) In a wok, add little oil, sauces, vegetables, ginger garlic paste & salt to taste. Steam the veggies.
3) Now make a small chapati, fill the filling, give desired shape & keep for steaming.
4) Steam the momos in a idli cooker for 10 mins approx.

Bread Pizza

Ingredients
1) sliced bread
2) Grated ginger garlic paste
3) Turmeric
4) Red chilli powder
5) Coriander powder
6) Garam masala
7) Chopped onions, tomatoes, capsicum
8) Grated paneer
9) Tomato ketchup

Method
1) Make pizza sabji by adding all the ingredients.
2) Now spread butter, ketchup on a sliced bread. Add sabji & grated paneer.
3) Sprinkle mixed herbs & basil leaves.
4) Place the bread on the hot pan & toast it on a medium flame.
5) Pizza is ready.

Mango ice-cream

Ingredients
1) 500ml milk
2) 1/2 big wati sugar or little less as mango pulp will be added.
3) 5 tsp custard powder
4) 2 Alphonse mango pulp

Method
1) Heat the milk & boil the milk for 10 mins more.
2) In a bowl, dissolve the custard powder in little COLD 
milk. There should not be any lumps.
3) Add sugar to the milk. Again boil it for 10 mins. Now add custard powder mixture. Keep stirring occasionally, so the milk doesn't burn.
4) Switch off the gas. Let the mixture cool. Add mango pulp. Keep in deep freeze for setting.
5) After 3 hrs. Put the mixture in blender. Again keep it in fridge for setting.

AamRas manday

Ingredients - approx. 15 manday
1) 3 big watis maida + 1/2 wati rava
2) Oil

Method -
1) Mix the maida & rava. Add oil to it. Knead the dough a bit loose. Cover the dough& keep it aside for half an hour.

2) Meanwhile, take a big container filled with water. Cover the container with the cloth. Tie the cloth with threads from all sides.

3) Let the water boil.

4) Roll a big chapati out of dough. Put oil on the chapati. Make into half. Again put some oil. Turn it into half.

5) Now place the chapati on a cloth. Place a steel plate on the container. Steam the chapati for 10 mins.

6) Manday is ready. Enjoy it with AamRas.
